Recently I did a quick meal out of things I happened to already have in the fridge. I was craving spaghetti but I wanted something a little on the lighter side as well as something that would be healthier for me. This meal was really easy, however I didn’t measure anything out so I can’t give you specifics on how much to use of what ingredients.
First I started with a spaghetti squash since I knew it would take the longest to cook. I always like to roast mine, although I know many people cook theirs in the microwave. I tossed it in the oven with some olive oil, salt and pepper. If you aren’t sure how to cook a spaghetti squash, a quick Google search can show you a few different ways.
While that was in the oven, I started on the shrimp. I warmed some Holy Smoke olive oil (if you haven’t tried this stuff out you really need to) up in a pan with some minced garlic and just sauteed the shrimp until they were done. I set them aside and then added more olive oil, garlic, salt and pepper to the pan and began warming it up while I waited on the squash to be done. After pulling the squash out of the oven I added grated Parmesan cheese to the olive oil along with about of 1/4 of a cup of water (if I was making regular pasta I would have reserved pasta water for this) and let that all simmer together on the stove. I tossed the shrimp back into the pan and began adding the spaghetti squash little by little.
That’s it! The meal took less than an hour to cook and only really included two ingredients I don’t normally keep stocked in the kitchen. If you try it out, let me know!
It never fails. I put a grocery list together and have some sort of plan for what I want to do but then during the week things happen. From having dinner with the family to staying late at work, sometimes I just don’t get the time to prep for dinner or meals for the next day. So at the end of the week I find myself with an excess of fruits and vegetables that I either have to use immediately or throw them away. Today I’m going to share what I did today to take clean out the fridge and make room for next week’s groceries.
- Lemon and blueberry water
- Sweet potato chips
- Kale, berry, apple and cucumber juice
- Kale, orange, carrot, apple, and ginger juice
- Large mason jar of apple juice (six medium red apples)
- Pot of homemade pasta sauce with spinach & mushrooms
Now not all of this was lying around in my fridge taking up space. Once I figured out what I could make from the leftover fruits and veggies I stopped by the store to supplement some of the recipes. However, my last grocery run was for juicing purposes so I did have an abundance of kale and spinach taking up way too much space.

A lot of people might think that it’s a waste of money having the membership and buying the meals, but for someone who lives alone and works all day it has actually been helpful to my wallet. I cannot tell you how many times I’ve just ordered out or run to the store to buy a pre-made meal from the deli. Over the course of a month, that adds up and weighs heavily on my bank account. With Plated, I’ve been able to cook twice a week and have meals for four, sometimes five days. I think the best part though is that everything is measured out for you so you don’t over buy in the grocery store and let things go to waste. The meals are diverse and really good, the only downside I seem to have is sometimes the dish is a little bland, but that has ore to do with my reservations in using salt than the dishes themselves.
I’ve learned to cook thinks I would have never even considered on my own. When searching for recipes to try, I always tend to grab things that look easy or contain ingredients that I’m confident with. The meals I’ve received so far have taught me how to use vegetables I never would have before or cook dishes that would have never even crossed my mind in the past.
